Named after an old time friend of the owners, Saroya who is Persian. Using a Persian spice called Sumac which is a smokey citrusy spice, dried apricots and a little orange blossom water adding a honeysuckle note and then enrobed in 72%South American chocolate this is a great chocolate with cheese courses or with butter cookies.
